Mmm..bacon. And tomato. and other good stuff.

Momma G called these "mini open-faced sandwiches". I thought that was kind of cute, because she was basically right.

JEGs and I made these appetizers for a party we went to, and within the hour they were g.o.n.e. They are super easy, and you can stuff anything inside these pastries- the possibilities are endless!

Unless you've been drinking. In which case, you probably shouldn't be baking. Leave that to the sober folks.


Tomato Bacon Cups (yields 2 1/2 dozen)
1 small tomato, finely chopped
1/2 cup mayo
1/2 cup bacon bits
1/2 cup shredded Swiss Cheese
1 small onion, finely chopped
1 teaspon dried basil
1 tube (12 ounces) refrigerated buttermilk biscuits, separated into 10 biscuits.

In a small bowl, combine the tomato, mayo, bacon, cheese, onion and basil. Set aside.

Split each biscuit into three layers; press each layer into an ungreased miniature muffin cup.

Spoon tomato mixture into cups.

Bake at 450 for 8-10 minutes, or until golden brown. Serve warm.

Hellllooo, bacon! Delish, and I'm totally snagging this idea from you for the next party.

By the way, I tried to comment a few weeks ago about Layla, but I was reading on an iPad...which may as well be a foreign device in my mind. Every time I tried to comment it nearly exploded...so I am late. But, I just wanted to say that if I could mail a hug, I would. I was crying while reading on a layover in God-knows-where. She was such a sweetie, and I am certain you and JEGS made her last few days everything a small kitten could desire. :) I'm sure your heart is still a little soft and achy for that sweet kitty...it looks like Layla was one of a kind. But, you made the right decision. :) And maybe someday, another snugggly furball will come crawling into your life again :)

Biscuits make this girl happy. And miniature food too. Hell, even comically large food makes me happy. Either way, bring these to my house.
